Dennis at Le Caveau in Grand Pre
On Saturday, June 12, Dennis headed down Highway 101 in his trusty old Volvo station wagon to cook with Jason Lynch, Executive Chef and Joseph Crocker, Sous Chef, at Le Caveau at Domaine de Grand Pre http://www.grandprewines.ns.ca/
It was the kick off to the 10th anniversary for the Winery and the Restaurant, and Dennis was their chosen guest chef for the evening.
Dennis and the Le Caveau culinary team prepared a four course meal that included his smoked haddock on warm mashed potatos appetizer (on Fid Resto’s ‘greatest hits’ list), a main course of Capon, braised radishes (really delicious), asparagus and baby carrots, a wonderful rhubarb tart and a local PEI cheddar and NS apple/honey plate that was a perfect way to end the evening. The wine (most of the Grand Pre reds and whites were available by the bottle or by the glass that night) provided a great compliment to the food, served under a big white tent out of doors at four big wooden communal tables with 65 delighted guests.
Dennis and Jason came out of the kitchen before each course, providing explanation of the food choices, how it was prepared and to answer questions. Between the food, the wine and the incredibly beautiful setting, weather and sunset, it was a night to remember for all who attended.
